How Much Charcuterie Do You Need Per Person?

After 30 years in the food industry — 17 of them in professional kitchens — the question I hear most is the simplest one: how much do I order? Here's the rule of thumb we use when we build your spread.
If the board is the appetizer
Plan on about 2 to 3 ounces of cheese and meat per person when dinner follows. Our Signature Board serves 8 to 10 this way — it's the right call before a sit-down meal.
If the board is the meal
Double it. When the spread is the main event — a cocktail party, an open house, a beach afternoon — plan on 5 to 6 ounces per person, plus breads, fruit, and nuts to round it out. That's grazing table territory, which we build at $20 per person with a 20-guest minimum.
For mingling crowds
Charcuterie cups ($12 each, minimum of 10) and boxes ($16 each) portion everything individually — one per guest, no guessing. They're the easiest math in the business.
Still not sure?
Tell us your guest count and the occasion on the order form and we'll size it for you. That's the part 30 years of feeding people is good for.
